I visited my aunt and uncle this weekend. My uncle Toon has a beautiful garden where he grows a lot of vegetables. They gave me a big bag full with delicious veggies and Roseval potatoes.
My wife, Iris, works in nature reserve Blauwe Kamer. In this nature reserve live wild horses and cows. Because there are no natural predators, the population grows larger than the nature reserve can support. They try to relocate the animals to other nature reserves but not all animals can be relocated. Those animals are slaughtered and the meat is for sale at the information centre in the nature reserve. This meat tastes very special. These animals have roamed freely through nature and ate nothing but the plants that grow in this nature reserve. They taste strong and herby.
5-6 roseval potatoes or other waxy potatoes
3 green bell peppers
1 green chili pepper
1 small courgette
juice of 1 orange
5 cloves of garlic
200g minced wild horse meat or minced beef
salt & pepper
Preheat the oven at 200ºC.
Slice the the vegetables and potatoes in 5mm slices. Slice the chilli pepper in half, remove the seeds and chop it finely. Crush the garlic cloves.
Mix the minced meat with salt, pepper and breadcrumbs and shape in patties of 1cm thick and 3cm in diameter.
Oil or butter a baking tin and spread the vegetables in it. Sprinkle with salt, pepper and orange juice. Place the meat patties on top of the vegetables and cover with the potato slices. The goal is to roast the potatoes and steam the vegetables and meat underneath. Make sure that the potatoes cover the vegetables and meat well. Sprinkle with salt and olive oil.
Bake in the oven for at least 60 minutes until the potatoes are golden and crisp.
