Last sunday, at the #undergroundboerenmarkt, I bought Bonnefons spice mixture (link in Dutch) from Lizet Kruyff. On her blog (link in Dutch) she gives a recipe how to use this spice mixture. I used it as a starting point to create my own recipe. It probably isn't historically correct but it's really nice anyway. Ingredients 2 cucumbers 3 small red onions 125g pappardelle 100g raw, smoked ham 2 teaspoons Bonnefons spice mixture
Bring 3 liters of water to the boil. Dice the cucumbers and ham and slice the red onions. Cook the pappardelle according to the instructions on the package. Bake the ham in a frying pan with little oil for 3 minutes. Remove the ham from the pan and gently fry the onions for 5 minutes. Then add the cucumber and Bonnefons spice mixture, stir and fry for another 5 minutes. Then add the ham and fry for a few more minutes. Drain the pappardelle and stir it through the cucumber mixture. Now it is ready to serve.
Notes: The spice mixture is very spicy. If you like Indian food, use 2 teaspoons as I did in this recipe. If you prefer a milder flavour, add some cream or sour cream to the mixture or use less Bonnefons spice mix.
